Speaking of coffee, do you know the story of the Charentais brûlot? This age-old tradition, used in particular by the "bouilleurs de crus", consisted of flambéing cognac on the surface of a cold coffee. This avoided wasting coffee, a rare beverage at the time and reserved for festive occasions.
